Sirloin and sirloin tip steaks are best cooked via reverse sear.
Here’s how:
1) Place steak on top of a wire rack on top of a baking sheet. (Pro tip: put foil on top of the baking sheet for easy cleaning).
2) Salt steak generously and let it sit while the oven preheats.
3) Preheat oven to 225°F.
4) Cook until internal temp reaches 120–125°F for medium-rare.
5) Heat a cast iron pan over high heat with a little oil of your choice.
6) Sear steak for about 1 minute per side.
7) Let rest 5 minutes before serving.
